The breakfast of royalty

We’re ready to celebrate this weekend and thought you might fancy cooking up some kippers, here are three recipes you might want to try:

Coronation Kipper Pâté:

Ingredients:

• 4 kippers, de-boned and chopped
• 4 oz cream cheese
• 2 tbsp mayonnaise
• 1 tbsp lemon juice
• 1 tbsp chopped fresh dill
• Salt and pepper to taste

Instructions:

1.  Combine the chopped kippers, cream cheese, mayonnaise, lemon juice and dill in a bowl.
2. Mash the ingredients together with a fork until they’re well combined.
3. Season with salt and pepper to taste.
4. Serve the pâté on crackers or bread.

King Kipper and Potato Hash:

Ingredients:

• 2 kippers, de-boned and chopped
• 4 large potatoes, peeled and diced
• 1 onion, chopped
• 2 cloves of garlic, minced
• 1 red pepper, diced
• 1 tsp smoked paprika
• Salt and pepper to taste
• 2 tbsp olive oil

Instructions:

1. Heat the oil in a frying pan over a medium heat.
2. Add the onion, garlic and red pepper to the pan and cook until softened.
3. Add the potatoes and smoked paprika and cook for 10-15 minutes until the potatoes are tender.
4. Add the chopped kippers to the pan and cook for an additional 5 minutes until the fish is heated through.
5. Season with salt and pepper to taste.

3 Kipper and Consort Spinach Salad:

Ingredients:

• 2 kippers, de-boned and chopped
• 2 cups baby spinach
• 1 small red onion, sliced
• 1 cup cherry tomatoes, halved
• 1/4 cup olive oil
• 2 tbsp balsamic vinegar
• Salt and pepper to taste

Instructions:

1. Combine the spinach, red onion and cherry tomatoes in a large bowl.
2. Add the chopped kippers to the bowl.
3. Whisk together the olive oil and balsamic vinegar in a separate bowl.
4. Drizzle the dressing over the salad and toss to combine.
5. Season with salt and pepper to taste.
